Serve this hearty soup with whole-grain bread and a cucumber salad.
Directions
Makes about 8 1-cup servings
12 cups water or vegetable broth
1 cup dry brown lentils
1 cup dry short-grain brown rice
1 small onion, chopped (about 1 cup)
2 tablespoons minced garlic (about 6 cloves)
1 cup finely chopped parsley, loosely packed
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon celery seeds
1/4 teaspoon cinnamon
salt, to taste
Bring water or broth to a boil in a large pot. Add lentils, rice, onion, garlic, parsley, oregano, thyme, black pepper, celery seeds, and cinnamon. Reduce heat, bring to a simmer, then cover loosely and cook, stirring occasionally, until lentils and rice are tender, about 45 minutes. Add salt to taste.
