Purple Escarole with Preserved Lemon Salsa


An exquisite member of endive family,Escarole is rarely spotted in purple.Purple or not,its delicately mild bitter flavor and tender crunchy stalks makes escarole completely edible salad green.If not raw,lightly saute in extra virgin olive oil with garlic or simmer in stew,to enjoy these elegant greens.These greens are available throughout the year,is high in vitamin A, calcium, folate and fiber.


The preserved lemons that I pickled last spring,had a perfectly ripe rind,ready to make a tangy addition in salads and stews.The zesty preserved lemon salsa spooned over crisp outer escarole leaves is easy and satisfying snack or start of a meal.


Escarole with Preserved Lemon Salsa

8-10 outer leaves of escarole
For Salsa
1 plum tomato,seeded and chopped
1 jalapeno,seeded and chopped
Quarter of a preserved lemon,rinsed and chopped
1/2 an onion,finely chopped
6-8 inner leaves of escarole,finely chopped
1/2 teaspoon fresh ground black pepper

Mix the salsa ingredients and let sit for few minutes in the fridge before serving over the escarole leaves.

Alfa-alfa Sprouts Olives Citrus Salad.



I learned a lot about Alfa-alfa sprouts from Malar's enlightening post here.Hunting in vain for the alfa-alfa seeds in stores everywhere I was unmindful that a store very close by sells the full-grown alfa-alfa sprouts for just a $1,certainly affordable and saved all the work of sprouting at home.
Make sure the sprouts you buy from a reputable store are fresh and ISCA(International Sprout Growers Association seal) certified label on the package.Read more about caution while sprouting at home in my post here.
The tangy green olives and citrus fruit complement well with the crisp sprouts for a quick and refreshing crunchy-munchie salad.

Ingredients
2 cups Alfa-alfa sprouts
1 cup green olives
1 Orange or grape fruit,segments
1/4 cup dried fruits like Cranberries or Raisin or Cherries
1/4 cup roasted nuts like almonds,pecans or walnuts
1 tablespoon Extra Virgin Olive oil
1 Tablespoon freshly squeezed lemon juice
1 tablespoon orange blossom water or rose water(optional)
1/4 teaspoon each of ground cinnamon and cumin
1/4 teaspoon salt

Method

Prepare the dressing by whisking together oil,salt spices ,orange blossom water and lemon juice.Combine the rest of the ingredient in a large salad bowl,drizzle over the dressing and mix .Serve on side with whole grains.

A Soup and Salad that Saved my day


I've slurped quite a few warming soups past week while recovering from the nasty viral infection.I personally never liked canned soups,the fresh home made soups certainly are my preference,lower in sodium and higher in flavor plus some wholesome pasta can make a potent meal,feeding body's defenses against infections.

Chunky Veggie Tomato Soup with Pasta
(serves 3)
Ingredients
2 cups tomato puree
1 cup carrots,diced or sliced
1/4 cup peas
1/4 cup french beans
1 clove garlic,finely chopped
1/4 teaspoon turmeric
1/4 teaspoon cumin powder
1/4 teaspoon chili powder
2 cups vegetable stock or water
1 tablespoon fresh cilantro,finely chopped
1 teaspoon extra virgin olive oil
2 cups cooked pasta
pita chips for garnish

Method
Heat the oil in a medium saucepan at medium heat, then add the garlic and spices,sauté for a minute.Add tomato puree,vegetables including the juice and the vegetable stock. Bring to a boil, season with salt, then let simmer for 20-25 minutes until veggies are tender,then add the cooked pasta.Simmer couple more minutes.serve warm with some pita chips.

Lentil Fattoush Salad


This is a refreshing Lebanese salad,usually made with greens ,crunchy pita chips and veggies,spiced up with tart sumac spice(available in Middle eastern stores).The brilliant idea of adding lentils comes from Suganya's Lentil fattoush salad,making this salad a meal in itself.Another invigorating meal that made me feel better.

Recipe
(Serves 2)
Ingredients
1/2 cup Whole lentils like green mung or pigeon peas
1 bay leaf
1 cinnamon stick
1/4 teaspoon salt
3 cups Romaine or Iceberg lettuce,chopped
1 medium tomato ,chopped
3-4 baby carrots,sliced
1/2 a cup pita chips,crushed

For Dressing
1 tablespoon herbs like mint or parsley,finely chopped
1 teaspoon Sumac
1 teaspoon Aleppo pepper or red pepper flakes
2 tablespoon lemon juice,freshly squeezed
1 tablespoon Extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper,freshly ground

Method
Wash and soak the lentils in cold water for 10 minutes.Drain the water,transfer in a pressure cooker or small saucepan with lid.Add 1 cup of water ,season with salt,drop the cinnamon stick and bay leaf and Cover,let cook on medium-high heat for about 8 minutes in pressure cooker and 30 minutes in the saucepan just until soft but not mushy.
Transfer all the vegetable in a large mixing bowl.Mix in the cooked lentils.Prepare the dressing in another bowl ,by whisking together the oil,juice,salt and spices.Combine the dressing in the vegetables mixture,toss to coat well.Sprinkle with crushed pita chips and serve.

Orange Carrot Salad with Orange blossom(orange flower water)


The citrusy Orange carrot salad with the piquant Orange blossom is another one of those heart-healthy feel-good Mediterranean salads with fresh,dried fruits,nuts,herbs and vegetables with splash of flavorful olive oil.The Orange blossom(Orange flower water)is the most unique ingredient in the salad,made by distillation of fresh bitter-orange blossoms.Must be available in most Mediterranean or Middle Eastern food stores.
Served with whole grains like brown rice or green freekah,this salad makes a healthsome meal.

Ingredients
2 Oranges(Navel or Valencia)[you could also use Grapefruit]
1 cup Carrots,Shred
1/4 cup dried fruits like Cranberries or Raisin or Cherries
1/4 cup roasted nuts like almonds,pecans or walnuts
1 tablespoon Olive oil
1 Tablespoon freshly squeezed lemon juice
1 tablespoon orange flower water
1/4 teaspoon each of ground cinnamon and cumin
1/4 cup freshly chopped herbs like Mint,Parsley or Cilantro


Method

Segment the oranges and mix all the ingredients in large salad bowl.Let sit in fridge for an hour for flavors to infuse then serve with a whole grain like,Green Freekeh Pilaf.
We loved this salad so much that I made it twice last week.Below is the picture of simpler version of the salad without the dried fruits and nuts.

Autumn Salad With Pumpkin seeds ,Nuts,Fresh Fruits and Pita Chips



With pumpkins abundant in the season ,I'm having a jolly good time cooking and baking with it.The nutritious beneficial seeds bounteous in its core should never be ignored. Toast them and use in Breads, salads ,add in your bowl of oatmeal or cereals ,candy(I'll post that recipe soon) and or simply munch'em for snacks. The Autumn salad gets a sensational flavor from crunchy pumpkin seeds along fresh apples,oranges,toasty almonds and home made pita chips.

How to Toast Pumpkin seeds?
Separate all the strings from the seeds. Rinse in water until all clean. Simmer in boiling water with little bit of salt for 5-10 minutes. Preheat Oven to 375F. Drain all the water and lay the seeds on a baking sheet. Drizzle about a table spoon of Olive oil evenly and bake until toasty about 20 minutes.

Autumn Salad
Ingredients
4 leaves of Romaine lettuce
1 red skinned Apple
1 navel Orange
1/4 cup roasted Pumpkin seeds
handful of roasted Almonds or walnuts
For dressing
2 tablespoon apple juice concentrate
1 tablespoon Olive oil
1/2 teaspoon ground cumin(zeera)
1/4 teaspoon freshly ground black pepper
1 cup pita chips(same as in the recipe,just cut in smaller bite-size squares)[use rice cracker for gluten-free salad]

Method

In a small bowl whisk together the apple juice concentrate,lime juice,Olive oil,cumin and black pepper until blended
Wash , dry and cut the lettuce leaves.Peel the oranges and remove the white pith. Cut the oranges and apples in half lengthwise. Before serving ,drizzle the dressing over the salad. Top with roasted almonds,pita chips and pumpkin seeds.

Nutrition Facts and Health Benefits of Pumpkins Seeds Pumpkin seeds are good source of protein and minerals like zinc and magnesium. Lowering cholesterol ,protection against certain kinds of cancer and reducing inflammation in conditions like arthritis are few of many health benefits of these wondrous seeds.

Sprouts and Snap Peas Salad

A crunchy Salad with bread is my idea of quick ,healthy and light lunch.


Ingredients Needed are
1 cup Mung Bean Sprouts(see how to grow sprouts)
8-10 Snap Peas
1/4 cup Carrots grated
4-6 cherry tomatoes cut in halves
2 tablespoon Lemon Juice
1 tablespoon chopped basil or cilantro
2 tablespoon Olive oil
Salt and Pepper as per taste.

To make the Salad
Using a Colander rinse the sprouts in cold water and drain all water.
Bring 2 cups of water to boil and drop the snap peas and cook for about 3 minutes until tender. drain all water and set aside.
Prepare the dressing by whisking together oil ,lemon juice,chopped basil, salt and pepper.
Transfer all the veggies and sprouts in a big salad bowl and toss them with the dressing. Serve with bread or stuff in sandwiches.

Mung Sprouts Nutrition Facts
Mung sprouts are low in Saturated Fat and Sodium, and very low in Cholesterol. It is also a good source of Protein, Thiamin, Niacin, Vitamin B6, Pantothenic Acid, Iron, Magnesium, Phosphorus and Potassium, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Riboflavin, Folate, Copper and Manganese.

Chicken Barley Vegetable Salad

What you'll need is
1 cup pearl barley
1 chicken Breast cut in 4 big slices
2 cloves garlic, sliced thin
1 carrot, cut into rounds
1/2 cup corn
1 tablespoon Fresh Lime juice
2 tablespoon cup olive oil
1/4 cup Mint or Cilantro Chopped

Bake the Chicken

Preheat oven to 400f
Cut chicken breast in to 3 pieces and marinate in salt and spices of your choice for 10minutes. I added a teaspoon Shan chicken tikka masala. Transfer the chicken in to a baking dish and baked for 15minutes. After baking let cool for few minutes then cut the chicken pieces in to cubes and set aside.

Cook the barley
Put barley in a saute pan over medium heat and toast until medium brown. In a pot, bring 3 cups of water to a boil with sliced ginger and salt. Add toasted barley and cook until tender about 30 minutes. Drain and set aside

Saute Vegetables
Heat EVOO in a pan and add sliced garlic. After few seconds when garlic is lightly brown add the vegetables and saute for a minute. Cover and cook for few minutes until vegetables are tender.
Mix
Toss the barley with the vegetable mixture and baked chicken. Garnish with Mint or cilantro or parsley.serve with orange slices
