Tuna Burger with Pine apple Relish,Plantain Fries and Berry Milkshake


The Ultimate Trio

I abstain from fast food burgers for all good reasons,but making one from scratch at home with better ingredients and flavors is an absolute pleasure of good food.I stumbled through Bobby Flay's Burgers,Fries and Shakes by chance at the library,one look through the book,was tempted enough to take it home and fix up at least a few of the of the tastiest combination of flavors ,that might just change my taste for burgers.
Bobby presents some fantastic twists to classic burgers,uses flavorful relishes and condiments to further enhance the taste of the beloved fast food.In addition the books had some tasty fries and refreshing shakes,to along for a completely satisfying meal.


Among the grilling guru's crafted tastiest recipes,the leaner seafood variety of Salmon and tuna burgers suited my palate perfectly.Although I did not completely stick with the original recipe,a lover of spices,had to add some more of the spicy ingredients and touch of greens to the burger.Also for the fries,shallow frying worked out well.The buns can definitely be store bought,since I never seem to find the right size hearty buns for my burgers,I choose to bake my own,even though it was 94F outside.On brighter side the steamy kitchen did quickened the rise of yeast in dough.The buns baked while the burgers cooked.The fries needed a close eye,the thin cut plantain can burn easily if ignored.

Recipe : Sesame Burger Buns
Make 3 large burger buns
Ingredients
2 1/2 cups whole-wheat flour
1/2 cup sesame seeds
1/2 teaspoon of salt
2 tablespoon extra virgin olive oil
1/2 cup of Warm water
2 teaspoon of sugar
2 teaspoon active dry yeast or 1 packet(1/4 ounce) of quick rise yeast

Method
Make the Dough
In warm water mix in the dry yeast and sugar. Let sit for 10 minutes,until it gets frothy.
In a bowl combine the flours,oil,seeds(reserve few sesame seeds for topping the buns) ,salt along with the yeast mixture. Knead until the dough is tacky but not sticky and place in a greased bowl and cover. Allow to rise for an hour until double its size.
Shape and proof the buns
Get the dough out of the bowl,sprinkle some all purpose flour on the work surface and knead the dough for few seconds and divide in to about 3 portions. Set on a cookie sheet and finish shaping the remaining buns,place them about 1/2 inch apart from each other,sprinkle some sesame seeds on each of the buns. Cover with wrap and allow to rise for another hour.
Bake the Buns
Preheat Oven to 450F. Bake for about 18-20 minutes until crust turns lightly brown. Let cool on rack,Slice using a serrated knife. Assemble the buns with choicest veggies and greens .


Recipe: Tuna Burger,adapted from Bobby Flay's Burgers,Fries and Shakes
Serves 3
Ingredients
For the burger
1 pound fresh Tuna
2 green onions(green and pale green parts),thinly sliced
1/2 tablespoon Dijon mustard
1 garlic clove,finely minced
1/2 inch piece of ginger root,finely minced
1/2 teaspoon cayenne pepper or hot chili powder
1/4 teaspoon each of cumin and coriander powder
few leaves fresh mint,finely chopped
1 teaspoon salt
1 tablespoon canola oil
3 whole grain sesame burger buns(as in the above recipe),split;toasted,if desired.

For the Pineapple Relish
1 cup pineapple,finely chopped
1 dill pickle,finely diced
1/4 cup finely chopped red onions
1 tablespoon fresh lime juice
1 teaspoon honey
3 tablespoon finely chopped fresh cilantro leaves
1 tablespoon extra virgin olive oil

few tender kale leaves and baby kale for topping (or use other leafy green of choice)

Method
To make the relish,combine the pineapple,pickles,onions,lime juice,honey,cilantro and oil in medium bowl and season with salt and pepper.Let sit at room temperature for 30 minutes before serving so that the flavors meld.

To make the Burger,cut the tuna in to large pieces and than coarsely chop in a food processor.Do not over process(or you can chop it by hand with a sharp knife)

Whisk together the mustard,dry spices,ginger,garlic and salt in a large mixing bowl.Add the tuna and green onions and gently fold to combine.Divide the tuna mixture in to 3 equal portions(about 5 ounces each).Form each portion loosely in to a 3/4 inch thick burger.Place on a plate,cover and let chill in refrigerator for at least 30 minutes before cooking.

To cook the burgers,heat the oil in a saute pan or griddle(non-stick or cast iron) until begins to shimmer.Cook the burger until golden brown on the bottom sides,about 3 minutes.

To assemble the burger,burger on the sesame bun with kale leave,top with relish and fresh baby greens.Serve immediately with the plantain fries and milk shake.


Recipe: Plantain Fries,adapted from Bobby Flay's Burgers,Fries and Shakes
Ingredients
2 green plantains
3/4 teaspoon salt
1 tablespoon grate lemon zest
1/2 teaspoon cayenne pepper or hot chili powder
2 tablespoon peanut oil

Method
Stir together the salt,lemon zest and cayenne pepper in a small bowl.
Heat oil in a medium cast iron pan over medium heat.While the oil heats up,peel the plantains using a sharp knife to cut off the top and bottom ends then peel the green skin off.Cut the plain in to 3,halve each of the three pieces in to thin slices.Now cut each strip lenghtwise in to about 1/8-inch-thick fries.
Shallow fry in batches,turning frequently,until golden brown,about 2-3 minutes.Remove using a slotted spoon on to a plate line with paper towels and season immediately with the salt mixture.Serve hot.

Recipe:Berry Milkshake
Ingredients
2 cups Frozen berries
2 cups skimmed milk
1 cup fat-free frozen yogurt
2 tablespoon Agave nectar

Method
Combine the milk and berry in a blender and blend for 10 seconds.Add the frozen yogurt and blend until smooth,about 30 seconds.Serve immediately,garnish with fresh strawberries,if desired.


My tough take on the ultimate trio from the scratch - warm toasty buns with a juicy burger and sweet tangy relish,crispy fries and an icy fruity shake,was a sure comforting end of a sizzling hot summer day.

Daring Bakers : Chocolate Berry Pièce montée(Croquembouche) with Mango Cream


Never in the deepest dreams did I think of putting together a spectacular French wedding cake.Thanks to daring bakers club for making the seemingly impossible bakes,possible.Every daring bake(17 so far) has indeed been a challenge,needs lot of planning ahead,thoroughly understanding the recipe before making any changes to it,allotting good amount of time for implementing the task,that could fail at first attempt but striving till succeeding should be the motto of a daring baker.The posting day is sure excitement in anticipation of fellow daring bakers creative takes on the challenge.I for one ,try not to deviate too much from the given original recipe while giving it a healthy make over,which is the best part of these challenges.

The May 2010 Daring Bakers’ challenge was hosted by Cat of Little Miss Cupcake. Cat challenged everyone to make a piece montée, or croquembouche, based on recipes from Peter Kump’s Baking School in Manhattan and Nick Malgieri.



A sure delightful dessert,cannot be reserved exclusively for special occasions,the following recipe has been changed enough to make it often.The Croquembouche,also known as Pièce montée, recipe has 3 main components: the pâte à choux(the puff pastry), the crème patissiere(pastry filling), and the glaze(Sugar or chocolate) used to mount/decorate it.The main building block of the centerpiece are cream filled pate a choux ,mounted in to a conical shape using hot sugar or chocolate glaze as glue.I choose pure dark chocolate for its good benefits and filling is a luscious cream with one of my favorite fruits.And for the decoration,the berries were a fitting juicy garnish.Goes without saying,we loved every bite of this dessert,devoured it all for a dessert course of meal.
Recipe : Dark Chocolate Berry Pièce montée(Croquembouche) with Low fat Mango Cream

The recipe makes a medium piece montee,double the quantities proportionately for a taller piece.

Ingredients

For low fat Mango Crème Patissiere
1 cup reduced fat milk or soy milk or almond milk
2 Tbsp. cornstarch
1 Tbsp. sugar
1 cup unsweetened mango puree or 1 large mango,peeled and pureed

Method
Dissolve cornstarch in ¼ cup of milk. Combine the remaining milk with the sugar in a saucepan; bring to boil; remove from heat.Mix in the mango puree until combined,chill before filling in the choux buns.

For Pate a Choux (Yield: About 18)
1/2 cup whole wheat pastry flour
2 tablespoon all purpose flour
2 large Organic or free range eggs
1/3 cup water
3 Tablespoon Organic unsalted butter
1/8 Teaspoon salt
1 Tablespoon brown sugar
Method
Pre-heat oven to 425◦F/220◦C degrees. Line a big baking sheets with parchment paper.

Preparing batter:
Combine water, butter, salt and sugar in a saucepan over medium heat. Bring to a boil and stir occasionally. At boil, remove from heat and sift in the flour, stirring to combine completely.

Return to heat and cook, stirring constantly until the batter dries slightly and begins to pull away from the sides of the pan.

Transfer to a bowl and stir with a wooden spoon 1 minute to cool slightly.Add 1 egg. The batter will appear loose and shiny. As you stir, the batter will become dry-looking like lightly buttered mashed potatoes. It is at this point that you will add in the next egg.

Piping:
Transfer batter to a pastry bag fitted with a large open tip or use a ziploc and snip off the tip. Pipe choux about 1 inch-part in the baking sheets. Choux should be about 1 inch high about 1 inch wide.

Using a clean finger dipped in hot water, gently press down on any tips that have formed on the top of choux when piping. You want them to retain their ball shape, but be smoothly curved on top.

Baking:
Bake the choux at 425◦F/220◦C degrees until well-puffed and turning lightly golden in color, about 10 minutes.

Lower the temperature to 350◦F/180◦C degrees and continue baking until well-colored and dry, about 20 minutes more. Remove to a rack and cool.

Can be stored in a airtight box overnight.

Filling:

When you are ready to assemble your piece montée, using a plain pastry tip, pierce the bottom of each choux. Fill the choux with pastry cream using either the same tip or a star tip, and place on a paper-lined sheet. Choux can be refrigerated briefly at this point while you make your glaze.


For Chocolate Glaze:
4 ounces/100 g. finely chopped best quality Dark chocolate(with at least 60% cocoa)
Method
Melt chocolate in microwave or double boiler. Stir at regular intervals to avoid burning. Use the best quality chocolate you can afford. Use immediately.

For decoration
Fresh berries of choice


To assembly of your Piece Montée:
You may want to lay out your unfilled, unglazed choux in a practice design to get a feel for how to assemble the final dessert. For example, if making a conical shape, trace a circle (no bigger than 8 inches) on a piece of parchment to use as a pattern. Then take some of the larger choux and assemble them in the circle for the bottom layer. Practice seeing which pieces fit together best.

Once you are ready to assemble your piece montée, dip the top of each choux in your glaze and start assembling on your cake board/plate/sheet. Continue dipping and adding choux in levels using the glaze to hold them together as you build up.
When you have finished the design of your piece montée,dip the berries in chocolate and fill in along the gaps, you may drizzle with remaining glaze and use ribbons,almonds, flowers, etc. to decorate.

Blintzes With Ricotta Cream And Strawberry Sauce


Ever heard of dessert for breakfast? blintzes are one such befitting example.These Eastern European cheese-filled crepes might appear sinfully loaded with calories but my recreation here is completely diet friendly with no saturated fat(butter) and lightly sweetened.No compromise with flavors though,the luscious strawberry sauce and light cheese filling embellish the blintzes inside out.


The star ingredient of the stuffing in these blintzes is Italian cheese - ricotta.Ricotta cheese comes in different varieties ,common are,smooth texture Ricotta salata , toasty baked Ricotta infornata,sheep's milk ricotta,smoked ricotta and cow's milk fine-grained ricotta.

By-product of cheese making,made from the whey,the fresh Ricotta is one of the few cheese that comes in low-fat and also very affordable ,which is why,it is utilized more often in my cooking.For these blintzes I use the low fat fine-grained ricotta and blend it with a sweetener until creamy and smooth.


More often I like strawberries whole and juicy than cooked,but once in a blue moon the overly ripe ,do make it into sauces.Darker the interior of the berries are,more sweeter and richer it is in anti-oxidants.Mix in other kinds of berries in the sauce for an even berrilicious sauce.


Recipe : Blintzes With Low-fat Ricotta Cream And Strawberry Sauce
Makes 10 Blintzes
Ingredients
For Crepes
1 cup Whole wheat flour( fine ground)
1 1/2 cup low-fat or skimmed milk
1 large Organic egg
1/4 teaspoon salt
1 tablespoon canola oil for greasing the pan and sauteing the blintzes later.

For Ricotta Cheese Filling:

1 1/2 cups reduced fat ricotta cheese
1 teaspoon pure vanilla
2 tablespoon Organic Agave nectar or Pure honey

For berry Sauce
1 pint Fresh strawberries( or blueberries or raspberries),hulled and chopped
2 teaspoon corn starch or arrow root powder
2 tablespoon Organic Agave nectar or Pure honey


Method
Use a whisk and combine the flour,milk,egg,salt and vanilla is a large mixing bowl until batter is smooth consistency.Let stand for few minutes.

Meanwhile prepare the sauce.Combine the berries and honey in a heavy saucepan.Cook over medium heat until berries bubble and release their juices,about 5 minutes
Dissolve cornstarch or arrowroot in lemon or orange juice and add to the fruit along.Reduce heat to medium-low and cook for 2 to 4 more minutes until the mixture begins to thicken.Remove from heat and allow to cool.For a smoother sauce,mash or puree half the berries with a potato masher or in a blender.

Next make the crepes.Heat a non-stick medium size pan. Slightly grease(with oil) the pan using a kitchen towel and pour a ladle full of the crepe batter into the pan,tilt it ,to spread the batter around the pan until the mixture sets. Place back onto the heat and wait until small bubbles appear on the surface, then flip the crepe over. Cook for a few seconds on the other side and remove from the pan with a spatula. Repeat the same for the rest of the batter.

Prepare the filling by whipping together cheese,sweetener and vanilla in a blender until creamy smooth.

To Assemble the blintz,spoon about a tablespoon of the ricotta cream mixture over the center of each crepe. Fold the opposite sides of the wrapper over the filling. Lay them on a plate,seam side down.Finish assembling all of the blintzes.

Final step,saute the folded crepes(blintzes),heat about a teaspoon of oil in a non-stick pan and saute them,in batches of 4,about 2 minutes on each side,until crisp and lightly browned.
Drizzle the strawberry sauce and serve warm or cold with slices of fresh strawberries.

Fruit and Nut Quinoa



Quinoa(pronounced KEEN-wah) originating from the Andes region of South America,is revered for its excellent nutritional profile.Its gluten-free with an exceptional source of protein,contains all eight essential amino acids and is high in iron,calcium,magnesium,phosphorus,B vitamins and fiber.With mild,slightly nutty flavor ,its a sensible substitute for white rice or couscous.

Quinoa is easy to cook like rice and couscous.Makes a delicious meal mixed with vegetables,herbs and spices.Quinoa is also great in soups and stews.Adding juicy fruits and nuts would tempt even a pickiest eater.
Recipe Fruit and Nut Quinoa
serves 4
Ingredients
2 cups Organic Quinoa
1/2 a medium onion,finely chopped
1 clove garlic,finely grated
1 teaspoon fresh ginger,finely grated
pinch of turmeric
1/2 teaspoon chili powder or cayanne
1/4 teaspoon ground cumin
1 cup berries(I use frozen cranberries and strawberries,use fresh when in season)
1 Orange,peeled and cut
1/2 cup each of pineapple and mangoes,diced
1/2 lightly toasted nuts (I use almonds and walnuts)
2 tablespoon fresh herbs(Parsley or cilantro),chopped
1 teaspoon salt
1 tablespoon extra virgin olive oil

Method
For a richer flavor,quinoa can be toasted in a dry skillet for a few minutes before cooking.Stir continuously during toasting to prevent burning and to toast the grains evenly.Rinse quinoa before cooking,place in a fine strainer and place under cold running water until water runs clear.Drain well after rinsing.
Heat oil on medium heat in skillet,add the onions,garlic and ginger,saute for 3-4 minutes.Add the spices and toast for another minute.Add 4 cups of water and bring to a boil.Then stir in the quinoa,lower heat and simmer,covered,until quinoa is tender but still chewy,that is until germ separates from the seed ,about 15 minutes.
Mix all the fruits, nuts and sprinkle the herbs before serving.

1/2 cup fresh or frozen Cranberries
*2 tablespoon Turbinado Sugar
3/4 Cup Water
1 ripe Banana
4-5 Strawberries,hulled.


Acai Berry Boost
1/2 cup acai juice
1 ripe Banana
1/4 cup Pomegranate arils
1/4 cup blueberries
4-5 Strawberries,hulled.
*2 tablespoon Turbinado Sugar
3/4 Cup Water


*one can skip the sugar to keep the smoothie low in sugar or can also use other sweeteners like stevia(liquid 3-4 drops) or Agave nectar(1 tablespoon)

Method
Blend all the ingredients to a smooth consistency.Serve

Juicy and Nutty:Watermelon-Strawberry-Almond Salad


I'm a disaster at selecting water melons.The ones I pick always turn out to be either unripe or not so juicy.How do you select a perfect water melon,one that's ripe red and juicy?Here is a simple tip from Mr.HealthNut- a melon that's heavy,with nice and green sheen and a yellowish-white spot at the bottom.We never miss buying them every week in summer,He is more of an expert than me when it comes to picking the right melon.He finds them the most rejuvenating food after the workouts,I totally agree.

The sweet water melon and strawberries with mint and nutty almonds make a refreshing salad for the sweltering hot days.Not mention the salad is loaded with much needed anti-oxidants.

Recipe
Ingredients
Quarter of a large water melon ,rind removed and cubed
1/2 pint strawberries,hulled and quartered
1/2 cup toasted almonds
1 cup Romain lettuce,chopped

For dressing
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice,freshly squeezed
1/2 teaspoon pepper,freshly ground
1 tablespoon fresh mint,chopped
1/4 teaspoon salt

Method
Prepare the dressing,whisk all the ingredients together in a small bowl.Pour over melon,berries and almonds in large salad bowl.Gently toss to mix.Keep cool in fridge until its time to serve.

Strawberry-Rhubarb Ice Pops(Popsicle)


Summer's here and so is the craving for frozen delights.The all-natural fruit Ice Pop with no artificial colors is the best thirst-quenching treat for sizzling summers.The Ice pop molds are easy to spot in stores at this time of the year.Not to worry,if Rhubarb doesn't suit your taste,make the Popsicle exclusively or with a combination of your favorite kind of berries.

(For 4 molds )

Ingredients

8-10 medium strawberries, hulled and chopped
1 cup rhubarb,chopped
1 tablespoon white sugar
2 tablespoons water

Method
Simmer the berries with rhubarb and water until very soft about 8-10 minutes.Puree in a blender or processor.Cool a little.Pour in the molds.Freeze for 6-8 hours.
To get the Popsicle out,dip or run under warm water,and slowly pull them out.


Strawberry-Greek Yogurt Popsicle.
Use 2 tablespoon of Greek yogurt(like Oikos) or just strain the yogurt in a muslin cloth for an hour.Prepare the puree as in the previous recipe,cool completely in fridge for 2-3 hours.Then mix the yogurt thoroughly in the chilled puree and pour in the molds and freeze.

Beware of those vibrant artificial food colors often used in Ice pops,very pleasing for the eyes but nothing like it when its gets in your body.Sensitive kids prone to allergies and those with behavioral problems should totally avoid foods with synthetic colors.

Chocolate Tofu Cheesecake With Berry Glaze


The April 2009 Daring Baker's challenge is hosted by Jenny from Jenny Bakes. She has chosen Abbey's Infamous Cheesecake as the challenge.
The blend and bake cheesecake was by far the easiest daring baker's challenge for me.I used store-bought crust and substituted three quarters of the cheese with silken tofu.The chocolate flavor and the berry glaze made this a memorable dessert served up on memorable family meet up with my dear brother and his family during the spring break.The idea of dessert in Tofu sounded odd at first ,but surprisingly the silken tofu blends in so well in this cheese cake,you'll never know this dessert is low fat and luscious at the same time with added nutrition of Tofu.

Ingredients for
Crust:

* 1 1/2 cups chocolate graham cracker crumbs
* 3 tablespoons canola oil
Or use Store-bought graham cracker or Oreo 9 inch pie crust

Cheesecake:

* 8 ounces Silken tofu
* 4 ounces light cream cheese
* 2 Organic eggs
* 2 tablespoon freshly squeezed lemon juice
* 1/2 cup unsweetened cocoa powder
* 1/2 cup brown sugar or white sugar.
* 1 teaspoon instant coffee powder

Berry glaze
2 cup of fresh or frozen berries(Strawberries,raspberries,blackberry or blueberry),chop if using strawberries
2 tablespoon brown sugar


Method

1. Preheat oven to 350 degrees F (Gas Mark 4 = 180C = Moderate heat). Begin to boil a large pot of water for the water bath.

2.Prepare the glaze,by reducing the berries with cup of water until soft and mushy.Blend to a smooth consistency.set aside.

2. If preparing the crust ,mix together the crust ingredients and press into your preferred pan. You can press the crust just into the bottom, or up the sides of the pan too - baker's choice. Set crust aside.

3. Combine all the ingredients in the bowl of a stand-mixer (or in a large bowl if using a hand-mixer) and cream together until smooth.

4. Pour batter into prepared crust and tap the pan on the counter a few times to bring all air bubbles to the surface.Pour the prepared glaze all over and spread using a table knife for swirl patter. Place pan into a larger pan and pour boiling water into the larger pan until halfway up the side of the cheesecake pan. If cheesecake pan is not airtight, cover bottom securely with foil before adding water.

5. Bake 45 to 55 minutes, until it is almost done - this can be hard to judge, but you're looking for the cake to hold together, but still have a lot of jiggle to it in the center. You don't want it to be completely firm at this stage. Close the oven door, turn the heat off, and let rest in the cooling oven for one hour. This lets the cake finish cooking and cool down gently enough so that it won't crack on the top. After one hour, remove cheesecake from oven and lift carefully out of water bath. Let it finish cooling on the counter, and then cover and put in the fridge to chill. Once fully chilled, it is ready to serve.

Pan note: The creator of this recipe used to use a spring form pan, but no matter how well she wrapped the thing in tin foil, water would always seep in and make the crust soggy. Now she uses one of those 1-use foil "casserole" shaped pans from the grocery store. They're 8 or 9 inches wide and really deep, and best of all, water-tight. When it comes time to serve, just cut the foil away.

Prep notes: While the actual making of this cheesecake is a minimal time commitment, it does need to bake for almost an hour, cool in the oven for an hour, and chill overnight before it is served.Sprinkle nuts over the slices and some fruit soup(made by reducing fruit juice),if desired.


Vegan Variation
Ingredients
4 ounce Tofutti Cream Cheese
1/2 cup brown or white sugar
1 package(8 ounce) silken Mori-Nu Tofu
1/2 cup cocoa powder
1 tsp vanilla extract
2 tablespoon corn starch
Method
Preheat oven to 350 degrees F.
Combine all the ingredients in a food processor until smooth.Spread over the crust and bake for 1 hour. Chill in the refrigerator overnight before serving.

Strawberry Cobbler With Orange Carrot Frozen Yogurt




Strawberry cobbler is another one of the delectable baking recipes I found in the Book Reader's digest Baking with Love,borrowed from the library here.The book is so cool,I'm not sure I'll ever return it back,I've already renewed it 8 times already now(almost 6 months).The Original recipe called for plums,but I used strawberries instead which are equally delicious ,in fact you could use any kind of berry ,Cherry Cobbler is another classic Cobbler recipe.The warm cobbler served with frozen yogurt made with fresh home made Carrot and Orange juice makes this dessert all the more scrumptious.

And did I say I made this special dessert for a very special occasion,my wedding anniversary.My boys absolutely love juicy berries,more than me or my hubby ,this dessert was most devoured by the little sweet hearts.I'm pleased to send this recipe over to "Cooking for kids With Love",a food event in memory of Pedatha’s spirit of love and nurture, and her innate knowledge of good food..And to two other food events celebrating Love Cooking with Luv For Luv and Made for each other.

Ingredients
10-12 Fresh Strawberries,Hulled(top cut) and sliced
1 cinnamon stick
1/2 cup unsweetened fruit juice Apple or Orange or Pomegranate or Grape

Crust
1 cup Whole Wheat Flour
3/4 cup All purpose flour
1 teaspoon baking powder
2 tablespoon Cold Organic Butter
2 tablespoon Brown or white sugar
1 tablespoon chopped walnuts
1 cup cold Skimmed(fat free) Milk

Method
Preheat Oven to 350F
Put the sliced strawberries,juice and cinnamon stick in a baking dish about 8x8 inches.
Prepare the crust\topping by sifting flour and baking powder in a mixing bowl.Rub in cold butter until mixture resembles fine bread crumbs.Stir in sugar and chopped walnuts.Make a well in the center,add the milk and mix to soft(not sticky dough).

Transfer dough to a lightly floured work surface and knead for few seconds.Roll out a rectangle about 1/2 cm thick and little wider than the diameter of the dish.With a sharp knife or pizza cutter or pastry wheel,cut dough in to strips about 1 cm wide.

Dampen the rim of the baking dish with water.Arrange the strips over the fruit in a lattice pattern,pressing each end on to the rim of the dish and trimming the ends of the dough neatly.

Bake for 25-30 minutes or until the topping is golden and the fruit is tender.Remove
the cinnamon stick before serving.

Serve warm with or without a scoop of low fat ice cream or frozen yogurt.

Orange Carrot Frozen Yogurt

Ingredients
2 cups unsweetened Low fat Organic yogurt(Use Full fat If desired)
1/4 cup freshly squeezed orange juice
1/4 cup fresh carrot juice
1/2 teaspoon Orange zest
1/4 cup Fine sugar
2 tablespoon Corn syrup (to prevent crystallization)

Method
Squeeze out all the water from the yogurt by placing it in a muslin\Cheese cloth and set aside.
Combine the rest of the ingredients in bowl,whisk to dissolve sugar,then stir in the fresh juices and the yogurt.Process in a ice cream maker and transfer in a freezer proof container and let freeze for 4-5 hours until firm before serving.

Strawberry Milk Shake with Homemade Strawberry Syrup.And a POMWonderful contest Entry.



"Most people associate vitamin C with oranges, but if you look at oranges versus strawberries, ounce per ounce, strawberries actually contain more vitamin C than oranges." A Doc at Center for Human Nutrition
In fact Strawberries have 58mg of Vitamin C verses 50 mg in Oranges.

Not an exciting fact, for folks living were Strawberries are not readily available as Oranges.Growing up in bustling city of Hyderabad(south India) with 365 days of sunshine,strawberries were considered exotic rare fruit and too pricey for daily consumption ,unless you live around the spectacular hill station of Mahabaleshwar(in Western Central Indian province), the hub of Indian Strawberries.

In this Indian Grand canyon,known for the scenic hill side drives and misty romantic boat rides,the juicy strawberry farms flourish more than any other region in India.I remember tasting my first strawberry during my memorable visit to this beautiful place few years back.The farm fresh strawberry milk shakes and ice creams sold at the fruit stalls have the unbeatable succulent flavor.The region is also famous for purest honey , tastiest fresh jams and the huge variety of chikkis(Jaggery and nuts candy).

Fast forward 6 years to were I live now in the frozen north(it literally is at this time of the year),thankfully strawberries are available throughout the season,little more in abundance and a few cents cheaper during summer .

Next only to chocolate ,I love to flavor my plain milk with strawberries.But mind you unlike hot cocoa,the strawberry milk shake has to be made cold.Even slight heating can easily curdle the milk shake,and tastes best when chilled.With strawberry syrup the milk shake is smoother cause the seeds have been filtered and not to mention the tasty berry flavor is sure to get the 'ICK' out of picky eaters who dislike milk.

Ingredients
For syrup
12-15 fresh strawberries,washed and sliced
1 cup of water
2 tablespoon sugar(optional,I excluded it)

For Milk Shake
3 tablespoon strawberry syrup
2 cups of Reduced fat Organic Milk or Soy milk or Almond Milk or Oat milk

Method
To make the syrup
Combine the syrup ingredients in a saucepan and bring the mixture to a boil,stir occasionally,cook for about 20 minutes. Allow mixture to cool slightly, then process in a blender or food processor ,pour through a strainer in to a storage container,this removes the strawberries seeds from the syrup. Can be stored in a sterilized container for about 2 weeks.Drizzle on toast,ice-creams or use it to flavor the cold milk.
To make the milk shake
Stir in the desired amount(about 2 tablespoon for 1 cup) of prepared strawberry syrup(completely cooled) in to the cold or room temperature milk.Enjoy!

Strawberry Banana Crepes

These fruit filled french pancakes are a wonderful way to start the day.


Ingredients for Crepe Batter
3/4 cup whole wheat flour(fine ground)
1/2 cup all purpose flour
1 whole egg plus 1 yolk
1/8 teaspoon salt
1 1/2 cups milk

1 tablespoon Canola oil

For filling
1 tablespoon butter
1 table spoon brown cup sugar
8-10 strawberries washed and sliced
1 banana sliced
To make the Crepes

Combine the flour, egg and egg yolk. Add salt and combine with the milk until the mixture is smooth. Let stand for 10 minutes.
Heat a non-stick medium size pan. Slightly grease the pan with oil and then place a ladle full of the crepe batter into the hot pan moving it around the pan until the mixture sets. Place back onto the heat and wait until small bubbles appear on the surface, then flip the crepe over. Cook for a few seconds on the other side and remove from the pan with a spatula. Repeat the same for the rest of the batter.
Prepare the filling
Heat a saucepan on medium heat add butter ,then add sugar and stir together for couple of minutes. Add the strawberries and combine .
Put together the crepe by placing the strawberry mixture in the center of each crepe ,along with sliced bananas and roll up. Sprinkle with powdered cinnamon and garnish with some more fresh sliced strawberries and bananas.

Chocolate Covered Strawberries


These chocolate covered strawberries are perfect for any party or just for snacking to satisfy your chocolate desires.

Ingredients needed are
5 ounces semisweet or dark chocolate, chopped

10-12 strawberries washed and dried


Melt the chocolate in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted. Or use a double broiler to melt the chocolate.

Once the chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Set strawberries on the parchment paper. Repeat with the rest of the strawberries.

Set the strawberries aside until the chocolate sets, about one hour.Serve Cold.
