Cape Malay Tomato Bredie


We are talking Soccer and South African Cape Malay cuisine in this post.

If you are a soccer fan,you might already know South Africa is the honored host of World cup Soccer 2010.Soccer runs in my family,I was no Mia Hamm,but was deeply influenced by the game from my daddy dearests soccer passion.He had immense skill at the game, played for his school team,that gave him an athletic persona.He continues his passion ,follows the world cup series closely.I remember the nights he stayed awake ,when the world cup games were aired at odd mid-night hours.The passion is passed on to my son Nabeel,who is beginning to show interest in the game.I get the title of soccer mom,for being there for all his games,rain or shine.I also love practicing the game with him,not to mention,gives me a good work out.

Now, to be good at the game,a well-balanced meal is essential.That brings us to the recipe of the day.Bredie,a luscious slow cooked tomato and lamb stew,one of the most favored dishes of the South African Cape Malay Cuisine,that is rich in protein and has good serving of vegetables.Bredie is best devoured with Yellow rice(brown rice preferably) and stir fried vegetables on side and some fresh sliced mangoes for a sweet finish.A meal that my daddy dearest would wholly appreciate.I know he is watching his cholesterol and is low on red meat,which is why I use lean meat for the recipe with vegetarian alternative.


Cape Malay Cuisine
With their soft, caramel skins and wide smiles, the Cape Malay people are a prized and proud element of the South African culture.
The first group of Malaysian state prisoners landed on the shores of South Africa from Java and the neighboring Indonesian islands in the late 1600's. Many more followed in the years 1727 until 1749. Not only did this proud and attractive people bring with them the Muslim faith and fine architecture, they also brought with them a unique cookery style, introducing exciting mixtures of pungent spices that has had a heady influence on traditional South African cuisine. Indeed, the Malay-Portuguese words such as bobotie (a curried ground beef and egg custard dish), sosatie (kebabs marinated in a curry mixture) and bredie (slowly cooked stews rich in meat, tomatoes and spices) are integral in our cookery vocabulary.

Recipe : Cape Malay Tomato Bredie adapted from Meryl Grebe's recipe
Serves 3-4
Ingredients
2 cups tomato sauce
1 medium onion,finely chopped
1 pound lean lamb or goat*,medium cut
2 medium sweet potatoes or yams,peeled and diced
2 cloves garlic,minced
1/2 inch ginger root,peeled and minced
1 teaspoon spice mix(ground cumin,pepper corns,coriander,cinnamon,cardamom and cloves)
1/4 teaspoon red chili powder or cayenne.
2 teaspoon extra virgin olive oil or canola oil
3/4 teaspoon salt

*Vegetarians could use 2 cups of Soy nuggets(available in Asian stores),lessen the cooking time.

Method
Trim any excess white fat from the meat.
In a heavy bottom skillet or pressure cooker,heat the oil,saute the onions until lightly colored,5-6 minutes.Add the fresh minced garlic,ginger and rest of the dry spices and salt,after a minute,add the meat and 2 cups of water.Cover and let cook for about an hour in the skillet or 25 minutes in the pressure cooker ,on medium low heat until meat is tender.
While the meat cooks,roast the sweet potatoes or yams,in an oven until tender.Keep aside.
When meat is tender, stir in the tomato sauce,roasted sweet potatoes and simmer for 4-5 minutes.Garnish with fresh herbs.Serve warm with brown rice or whole grain flat bread.

Low fat Vegetable Latkes With Cinnamon Apple Sauce


I love variety in breakfast,with time to spare and recipes in hand,why not make every breakfast an extraordinary one.On breakfast menu today are Latkes, traditionally prepared on Hanukkah,these are the crisp deep fried potato pancakes.I give them a low calorie make over without using eggs,frying in least amount of oil on stove-top or even better baking and casting the white potatoes with some vibrant vegetables to enhance the flavor and nutrition.

Recipe Low fat Eggless Vegetable Latkes
makes 18-20 small latkes
Ingredients
1 medium Sweet potato,peeled and grated
1 big carrot,peeled and grated
1 medium russet potato,peeled and grated
1 large zucchini,grated
1 tablespoon Onions,finely chopped or minced
2 tablespoon wheat flour
1/2 teaspoon freshly ground black pepper
3/4 teaspoon salt
1 tablespoon(about 4 teaspoons) canola oil or cooking spray if baking

Method
Combine all the grated vegetable in a large mixing bowl.Add flour,season with salt and pepper and stir to distribute evenly.
Heat about about 2 teaspoon of oil in a large non-stick pan or cast iron pan over medium heat.Carefully place about a tablespoon of the vegetable mixture on the hot oil and flatten a little using a spatula.I fried 6-7 at a time in the large pan.Flip after 4-5 minutes until golden brown and repeat on other side.Strain any excess oil on a paper towel.Add about a teaspoon of oil for each batch of latkes.Finish making the latkes with rest of the mixture.Keep warm in oven.Serve with Fat-free sour cream and Cinnamon apple sauce on side.

Baked Latkes
Spoon the vegetable mixture on a lightly greased baking sheet and flatten them a little.Spray a little cooking spray over each of them and bake at 375 oven for 15-20 minutes until the top is crisp and golden brown on top.


To make Cinnamon Apple Sauce for 3-4 servings.
Peel, core and chop 4 Macintosh or Granny smith apples.Cook them with a cup of apple cider,1/2 teaspoon cinnamon and 1/4 teaspoon lemon zest until soft and mushy about 30 minutes.Puree for smoother sauce.

Crunchy-Creamy Cannoli with Low fat Ricotta Cocoa Filling

Hope you all had a wonderful Thanksgiving feast.And all ready for the shopping spree on the most busiest shopping day of the year.Good luck!
Today is also Eid-ul-Adha.My hearty Eid wishes to all my viewers celebration this festival of sacrifice.
And also today happens to be the day all Daring bakers post their courageous bake of the month.Surprisingly this month we skipped the baking and devoured the festive Italian Pastry,cannoli.Thanks for Michele I was given an option of baking the deep fried shells,that I'm afraid didn't yield anything but crisp cannolis.Following the more authentic method of making them resulted in the most crisp shells.I rolled the dough very thin,so if you treasure a pasta machine or a tortilla\roti press,then making this pastry can be so much easier.Its not necessary to buy a cannoli forms\tubes to make these,one can always use a wooden stick about 5-6 inches long.Go wild with the fillings , I played around with some fresh produce of the season,cranberries and sweet potatoes.The second filling is low fat ricotta whipped with cocoa and garnished with nuts.

The November 2009 Daring Bakers Challenge was chosen and hosted by Lisa Michele of Parsley, Sage, Desserts and Line Drives. She chose the Italian Pastry, Cannolo (Cannoli is plural), using the cookbooks Lidia’s Italian-American Kitchen by Lidia Matticchio Bastianich and The Sopranos Family Cookbook by Allen Rucker; recipes by Michelle Scicolone, as ingredient/direction guides. She added her own modifications/changes, so the recipe is not 100% verbatim from either book.

Lidisano’s Cannoli
For CANNOLI SHELLS
1 cup (125 grams/8 ounces) all-purpose flour
1 cup (125 grams/8 ounces) whole wheat flour(fine ground)
2 tablespoons(28 grams/1 ounce) sugar
1/2 teaspoon (1.15 grams/0.04 ounces) ground cinnamon
1/2 teaspoon (approx. 3 grams/0.11 ounces) salt
3 tablespoons (42 grams/1.5 ounces) vegetable or olive oil
1 teaspoon (5 grams/0.18 ounces) white vinegar
Approximately 1/2 cup (approx. 59 grams/approx. 4 fluid ounces/approx. 125 ml) Fruit juice
1 large egg, separated (you will need the egg white but not the yolk)
Vegetable or any neutral oil for frying


Note - For chocolate cannoli dough, substitute a few tablespoons of the flour (about 25%) with a few tablespoons of dark, unsweetened cocoa powder (Dutch process) .

DIRECTIONS FOR MAKING SHELLS:
1. In the bowl of an electric stand mixer or food processor, combine the flour, sugar, cinnamon, and salt. Stir in the oil, vinegar, and enough of the juice to make a soft dough. Turn the dough out onto a lightly floured surface and knead until smooth and well blended, about 2 minutes. Shape the dough into a ball. Cover with plastic wrap and let rest in the fridge from 2 hours to overnight.

2 Cut the dough into two pieces. Keep the remaining dough covered while you work. Lightly flour a large cutting or pastry board and roll the dough until super thin, about 1/16 to 1/8” thick (An area of about 13 inches by 18 inches should give you that). Cut out 3 to 5-inch circles or squares.
Pasta Machine method:
*Divide the dough into 4 equal pieces. Starting at the middle setting, run one of the pieces of dough through the rollers of a pasta machine. Lightly dust the dough with flour as needed to keep it from sticking. Pass the dough through the machine repeatedly, until you reach the highest or second highest setting. The dough should be about 4 inches wide and thin enough to see your hand through.Continue rolling out the remaining dough. If you do not have enough cannoli tubes for all of the dough, lay the pieces of dough on sheets of plastic wrap and keep them covered until you are ready to use them.

3 Oil the outside of the cannoli tubes. Roll cut dough from the long side around each tube/form and dab a little egg white on the dough where the edges overlap. (Avoid getting egg white on the tube, or the pastry will stick to it.) Press well to seal. Set aside to let the egg white seal dry a little.

4. In a small deep heavy saucepan, pour enough oil to reach a depth of 2 inches. Heat the oil to 375°F (190 °C) on a deep fry thermometer, or until a small piece of the dough or bread cube placed in the oil sizzles and browns in 1 minute. Have ready a tray or sheet pan lined with paper towels or paper bags.

5. Carefully lower a few of the cannoli tubes into the hot oil. Do not crowd the pan. Fry the shells until golden, about 2 minutes, turning them so that they brown evenly.

8. Lift a cannoli tube with a wire skimmer or large slotted spoon, out of the oil. Using tongs, grasp the cannoli tube at one end. Very carefully remove the cannoli tube with the open sides straight up and down so that the oil flows back into the pan. Place the tube on paper towels or bags to drain. Repeat with the remaining tubes. While they are still hot, grasp the tubes with a potholder and pull the cannoli shells off the tubes with a pair of tongs, or with your hand protected by an oven mitt or towel. Let the shells cool completely on the paper towels. Place shells on cooling rack until ready to fill.

9. Repeat making and frying the shells with the remaining dough. If you are reusing the cannoli tubes, let them cool before wrapping them in the dough.

Fillings
Roasted Sweet Potato with fresh Cranberry sprinkles
Scrub and roasted a sweet potato in 375F oven for about 30-35 minutes until the caramelized sugars ooze out.Slightly cool and blend to a smooth paste.Blend in a tablespoon of honey or agave nectar for more sweetness.Use some chopped fresh or dried cranberries for sprinkling on top.
Low fat Chocolate Ricotta with toasted pistachios
Whip or blend together a cup of low fat ricotta with a tablespoon of unsweetened cocoa powder and a tablespoon of sweetener(Honey or Agave nectar or Brown rice syrup).Use toasted pistachios for garnishing.


ASSEMBLE THE CANNOLI:
When ready to serve..fill a pastry bag fitted with a 1/2-inch plain or star tip, or a ziploc bag, with the filling. If using a ziploc bag, cut about 1/2 inch off one corner. Insert the tip in the cannoli shell and squeeze gently until the shell is half filled. Turn the shell and fill the other side.

Peruvian Causa ,a layered Potato and Vegetable Salad



Potato salad never looked so gorgeous before,I was overwhelmed to see this kaleidoscopic salad at Veggie belly.Causa is a Peruvian layered salad served as an appetizer,made using a variety of potatoes and other vegetables.
I stacked mine with pretty much what I had in hand.The tomato layer is the spiciest and rest of the layers are mildly flavored.And unbelievably I didn't buy any special mold , but reused the tall Pringle can,halved it for an open end on both sides,the smooth interior worked out very well for a mold.
Thanks to Veggie Belly I learned to stack a potato salad with a wholesome makeover :>

Makes 4 stacks about 8inches tall & 4inches wide

Spicy tomato Layer
Ingredients
4 plum red tomatoes,chopped
1/2 teaspoon chili powder
pinch of turmeric
2 clove garlic,chopped
1 tablespoon chick pea flour(besan)
1 teaspoon coriander powder(Dhania)
1/2 teaspoon salt
1 teaspoon extra virgin olive oil

Method
Heat the oil on medium heat,add the garlic ,after few seconds add the chopped tomatoes and spices.cover and cook until tomatoes are tender,about 10 minutes.Season with salt,then stir in the flour,keep stirring until completely mixed and cook for another 6-7 minutes until mixture is thicken.Allow to cool.

Vegetable Layer 1 White potatoes
boil or bake 1 big or 2 medium potatoes, until cooked through.Peel and mash,season with salt and pepper.keep aside.
Vegetable Layer 1 -Purple Cabbage
Finely chop or coarsely grind in a food processor 2 cups of cabbage .

Vegetable Layer 2- Edamame
coarsely grind 2 cups cooked edamame ,mix with teaspoon of lime juice.

Vegetable Layer 3 -Sweet Potatoes

Boil or Bake 1 big or 2 medium sweet potatoes ,peel ,mash, season with salt and mix with some spices like coriander powder if desired.

To Assemble the layers
Place the mold on a serving plate.Assemble them in any order but make the top and bottom layer as a layer of potato or a firm layer.Take the about a 2 tablespoon of sweet potato and spread on the bottom.Over this spread 2 tablespoon of edamame,gently press down each layer.Next spread 2 tablespoon of cabbage ,then 2 tablespoon of white potato and finally the spicy tomato layer.
To unmold,slowly lift the mold ,don't panic if the stack doesn't unmold smoothly,as it happened with mine,lightly push it down on to the plate.Serve with some sprouts or Veggie belly's creamy avocado dressing.I figured this salad also made a good dip with baked chips.

Chocolate Sweet Potatoes Marble Bundt Cake


The sumptuous chocolate cake with the hidden nutritional benefit of sweet potatoes was a fitting treat to celebrate our little one's second birthday.In just one year ,the apple of my eye has grown from being a crawling baby to a jumping ever so naughty toddler.Though just beginning in his vocal skills , babbling pretty much ,except for few simple words,my most loved one being thaan chu(for thank you);he has excelled in delighting himself with his explorations around the house,kitchen in particular is his favorite territory.Very often he sneaks in to the kitchen looking for reachable sweet munchies or grab some of his favorite pot and pans for a kitchen Orchestra.
As one would expect from a Health Nut Mom,I'm concerned about his big sweet tooth and prefer giving naturally sweet foods like fruits and dry fruits ,and almost never buy candies or chocolate treats.Thankfully besides chocolate the little guy absolutely loves fruits.
However I do allow occasional homemade goodies made with chocolate.And What's birthday without chocolate?Nothing quite says Happy birthday like Chocolate.The nutritional sweet potatoes add a silky moist texture to the cake and its mild flavors let this cake be predominately chocolate flavored.
This is a lofty cake rightly suited for feeding a crowd.But one can even make the same cake in a regular baking pan or a loaf pan,adjust the quantities proportionately.

Ingredients
For Chocolate layer
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup unsweetened cocoa powder
2 Organic eggs
2 tablespoon Fat free Sour cream
1/2 cup brown sugar or use a natural sweetener like agave
1/2 cup semi sweet chocolate chips.
1/4 teaspoon salt
1/2 teaspoon baking powder
4 tablespoon(1/2 cup)Organic butter,melted and cooled,divided
1/2 cup reduced fat Organic milk

For Sweet Potato layer
1 cup all-purpose flour
1/2 cup Whole wheat flour
1 1\2 cup Sweet potato puree(1 whole medium size sweet potato),see how to cook sweet potatoes.
2 tablespoon Fat free Sour cream
2 Organic eggs
1/2 cup brown sugar or use a natural sweetener like agave
1/4 teaspoon salt
1/2 teaspoon baking powder
4 tablespoon(1/2 cup)Organic butter,melted and cooled
1/2 cup reduced fat Organic milk


Method
Preheat oven to 350F.Prepare the Bundt pan,first butter then dust with all purpose flour,tap out any excess flour.

Prepare the Chocolate ganache for the Chocolate layer
Melt 2 tablespoon of butter and the semisweet chocolate chips in a bowl(glass or steel) placed over saucepan with gently simmering water(double broiler).Stir occasionally until the mixture is smooth.Set the bowl aside.

Prepare chocolate Layer
Sift all the dry ingredients(flours and powders) in large mixing bowl.
In another mixing bowl whisk together melted butter and sugar ,Crack the eggs and whisk then add the prepared chocolate ganache, stir in milk ,sour cream and combine until mixture comes together. Now add the dry mixture slowly in to the wet mixture while stirring it.

Prepare the Sweet Potato Layer
Repeat the same.Sift all the dry ingredients(flours and powders) in large mixing bowl.In another mixing bowl whisk together melted butter and sugar ,Crack the eggs and whisk then add the sweet potato, stir in milk ,sour cream and combine until mixture comes together. Now add the dry mixture slowly in to the wet mixture while stirring it.

Bake
For marble pattern,add spoonful of sweet potato and chocolate mixture alternately. Then make a swirl pattern using a table knife through the batter to marble them.

Bake for 55 to 60 minutes, or until a knife inserted into the center of the cake comes out clean.Cool on rack for 30 minutes before trying to unmold it.Cool,slice and serve.Prepare extra chocolate ganache and drizzle on the cake,if desired.

Sweet Potato Pie with Caramalized Nuts topping



I reserve decadent pies just for potlucks or parties,if I happen to bake one just for ourselves,my hubby's(with exceptional sense of smell and aversion for solid fats) first query would be "Did you add butter in it?!",yes obviously, who ever heard of a pie without butter or shortening?,then he would just eat a miserly little piece,and the rest is for me.I have a very small appetite for desserts,can't eat the small kind for a fortnight.Hence to be on safer side I bake the full-size pies just for festive or special gatherings.So I took this wholesome pie for a potluck ,though its missing my favorite element in a dessert,that is chocolate,but with sweetness from potatoes,spices and caramelized nut topping this pie was just as delicious. Omitting eggs and using cornstarch is an option too,like I did in my Eggless Chocolate Pumpkin pie.

Ingredients
For Crust
3/4 cup all purpose flour
3/4 cup Whole wheat flour
4 tablespoon(1/2 a stick) Organic butter, cold and cut in small cubes
1/2 teaspoon salt
1/2 teaspoon ground spices mix,I used cinnamon and cloves.
1/2 cup ice cold water


For Filling

2 1/2 cups Sweet potato puree(see how to cook sweet potatoes?)
1/4 cup brown sugar
1/2 teaspoon ginger powder or 1/8th of a teaspoon of fresh grated ginger
1/2 teaspoon Cinnamon or Pumpkin Spice(mixture of ground nutmeg,cloves and cinnamon)
2 large Organic eggs


For Caramelized Nut topping
3/4 cup mix of roasted nuts,roughly chopped [I used pecans,almonds and pistachios)
1 tablespoon Organic butter,use the light kind if desired
2 tablespoon brown or white sugar

Method

Prepare the dough
Sift the flours,salt and cinnamon in bowl. Mix in the butter,using a food processor pulse while adding the cold water ,until just combined in to a crumbly mixture. Or use 2 fork and break the butter in to flour and mix it up while adding the cold water.Wrap the dough in a plastic wrap and allow to refrigerate for 30 minutes

Bake the Crust
Preheat Oven to 350F
Unwrap the dough. Spread some all purpose flour on work surface and using a rolling pin, roll out the dough in to size just bigger that your pan size(9 inches).Transfer the rolled dough to the pie or tart pan.Press gently to smooth it out and poke some holes using fork to prevent it from rising.
Bake the crust for in the middle rack of the oven for about 15-20 minutes until the crust is lightly crisp.
Bake the pie
Mix all the filling ingredients,crack the eggs in mixing bowl,stir in the puree ,sugar and spices. Pour it on the baked crust and spread evenly using a spatula. Bake about 40-45 minutes until the filling is firm.Cool completely before spreading the nut topping,at least an hour.

Prepare and Spread the topping
Melt the butter in a pan at medium heat,add the sugar and stir.after about 2 minutes when the sugar get slightly bubbly and brown, add in the nuts and stir to combine.Turn off the heat ,allow the mixture to slightly cool about 1 minute.Then spread over cooled pie ,serve when topping is set.

Sweet Potatoes Peanut Butter Cup cakes with Peanut butter Cream cheese frosting.





With the goodness of both sweet potatoes and peanut butter combined,these are not your average cupcakes.Though I could eat the super healthy
warm roasted sweet potatoes as it is ,using them in a cupcake makes its incredibly moist delightful treat.Peanut butter adds the extra nutrition.And also one can go generous with the frosting,cause the creamy Mono saturated Peanut butter is healthy replacement for the Saturated fat butter.For more on nutrition of sweet potatoes see my previous post here and Peanuts to fight diabetes here.

Ingredients
2 cups sweet potatoes,mashed or pureed(about 1 medium size sweet potato),See how to cook sweet potatoes?
2 heaping tablespoon Peanut Butter,chunky or creamy,see how to make home made peanut butter?.
1 cup whole wheat flour
1 1/2 cup all purpose flour
1 teaspoon baking powder(aluminum free)
1/2 teaspoon baking soda
2 large Organic Eggs(or replace with Ener-G egg replacer powder or 1/2 cup flax seed meal)
1 cup reduced fat Organic milk or Soy milk.
1/2 cup Extra virgin olive oil or Vegetable oil
1/2 teaspoon salt
1/2 cup dry fruits like cherries,cranberries,raisins or blueberries
1/2 cup brown sugar or 1/4 cup of natural sweeteners like Honey,maple syrup or Agave nectar

For frosting
1/4 cup Low fat cream cheese
2 tablespoon Pure Honey or Maple syrup or Date Syrup
2 tablespoon of Peanut butter,creamy
Some roasted pistachios for garnish.

Makes about 10-12 cup cakes.

Method
Preheat oven to 350 degrees.Line the muffin tray baking cups.
Combine the dry ingredients in a large bowl.In another bowl whisk eggs,mix in sugar and oil,add the sweet potatoes and peanut butter ,combine. .Now combine this wet mixture slowly in the dry mixture until completely incorporated.
Fill the baking cups 3/4 th full and bake for 20-25 minutes or until toothpick inserted comes out clean.

Cool completely.

Prepare the frosting by whipping the frosting ingredients until smooth and spreadable.Slather over the cooled cupcakes using a spatula ,sprinkle with finely chopped pistachios.

Sweet Potatoes Blueberry pancakes,a probe into another Super food.


Don't assume this crooked vegetable is just another ordinary cousin of potato family and its sweetness is no good for diabetic diet.Quite the contrary the anti-oxidant rich sweet potatoes have been listed as one of the top healthy foods. A deeper study in to its nutrients reveals that unlike potatoes,these sweeter potatoes have low glycemic index ,release glucose slowly into the bloodstream helping avoid sudden rise in blood sugar levels ,which is important in managing diabetes.
Not just for diabetics,sweet potatoes should also become a more frequent part of our regular diet to prevent against cancers and heart disease.Also the good source of dietary fiber will help you stay regular and will keep you fuller longer.And for those of you on diet resolutions,the sweet potatoes with complex carbohydrates are a wise choice for the carb intake.
For someone like me who spends hours gazing at the computer ,its gotta be the richness in Vitamin A(beta-carotene) that made me fall for it.Vitamin A is essential for overall eye health,sweet potatoes even beat carrots in its concentration of vitamins.
I'm working on preparing a set of recipes with this wonder vegetable.Sweet potato pancakes is easy and delicious to begin with.Using baked and mashed sweet potatoes these pancakes were snap to prepare,topped with tart blueberries these were instant hit for breakfast.

How to cook the Sweet potatoes?

The roasting\baking method seemed effortless,line your baking sheet with aluminum foil for easier clean up.
To Bake
Preheat oven to 375F.Lay on a baking sheet and bake for about 40-50 minutes depending on the size of the potatoes.To check if done,use a fork and if it feels soft all the way to the center,then its time to get them out.cool for few minutes,peel and mash.
To boil
Depending on the size boil for about 30-35 minutes.
To Microwave
Wrap the sweet potato in a good quality plastic wrap,set the microwave on Bake potato setting,about 5-6 minutes for 1 medium sweet potato.

Recipe

Ingredients
1 1/4 cup Whole wheat flour
1 cup Reduced fat milk
1 cup sweet potatoes ,mashed
3/4 cup Blueberries,fresh or frozen
1 large Organic egg(or 1 1/2 teaspoon of egg replacer powder)
1 tablespoon canola oil
1 teaspoon of baking powder(optional,I didn't add in mine)
1/4 teaspoon baking soda
1/4 teaspoon salt

Makes about 15 pancakes.
Method

Baked or boil sweet potatoes just like above.Peel,mash or process in a blender until pureed.Let cool completely before making the pancake batter.
sift together the flour, baking powder,baking soda and salt in a large mixing bowl.In another bowl,whisk egg along with milk and pureed potatoes . Mix both wet and dry mixtures.
Heat non stick pan on medium flame. Grease it lightly with oil . Pour one ladle of batter and ,I you like the pancakes thinner like me,spread a little by lifting and slightly tilting your pan around. drop about 4-6 blueberries around the pancake,drizzle about a teaspoon of oil all over and wait for a minute before flipping and let it cook for another minute.Repeat the same for the rest of the batter.


Serve warm with drizzle of Honey ,Date Syrup or Maple Syrup.
