Whole Wheat Blueberry Pancakes
One of the nature's best source of antioxidants are Blueberries. Eating these berries in the first meal of the day gives a healthy start of the day. Do use whole wheat flour in your pancakes to add fiber and other essential nutrients which are not found in All purpose flour.
What you'll need is
3/4 cup Whole Wheat flour
1/4 cup toasted Wheat Germ
1 large organic egg
1/2 cup of Reduced fat Milk
2 tablespoon Wheat Bran
1/4 teaspoon Baking soda
1/4 teaspoon sea salt
1 tablespoon Brown sugar
1 tablespoon yogurt
1/2 cup fresh blueberries or 1 banana sliced
Some Vegetable oil or Extra Virgin Olive oil
To Make the pancakes
Mix all the dry ingredients. Whisk egg with sugar ,milk and yogurt. Add this wet mixture to dry mixture to make a smooth batter.
Heat non stick pan on medium flame. Grease it lightly with oil . Pour one ladle of batter and spread a little by lifting and slightly tilting your pan around. drop about 6 blueberries or slices of banana around the pancake and wait for a minute before flipping and let it cook for another minute.Serve warm with drizzle of Honey ,Date Syrup or Maple Syrup.I prefer eating without any sweet condiment as blueberries have the unique tart taste which is best without drizzling any sweet syrup over it.Health Nut Substitute:
If blue berries are not in season use some dried cherries.
