Vegetable Barley Soup

Ingredients you'll need are
1 cup uncooked barley
2 large carrots, chopped
2 stalks celery, chopped
1 zucchini, chopped
1/2 cup peas
1 onion, chopped
2 cloves garlic
1 inch ginger root
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon turmeric
1/4 teaspoon chilly powder(or more to make it spicier)
1/2 teaspoon cumin powder
To make this hearty Soup
Prepare the vegetable broth by boiling 3 cups of water in a pot with half of the chopped vegetables celery,zucchini,onion and carrots along with chopped ginger and garlic. Simmer for an hour on low flame. Drain in big bowl and keep aside.
Add EVOO in the pot and 1/2 chopped onions. Saute for a minute and add the spices (chilly ,turmeric and pepper). Add the prepared broth , chopped vegetables and barley . let simmer for about 30 minutes until barley is tender. Serve hot .
